Ingredients
Crème Anglaise Ingredients
- 250 ml Milk
- 2 Large Egg Yolks
- 50 gm Caster Sugar also known as superfine sugar
- 1 Vanilla Bean split lengthwise, or 2 teaspoons vanilla extract
Caramelized Bananas Ingredients
- 4 Bananas ripe but firm
- 4 tbsp Butter unsalted
- 50 gm Caster Sugar
- 1 pinch Cinnamon ground
- 1/4 tsp Nutmeg freshly grated, ground, if possible
Instructions
Prepare the Crème Anglaise
- Gently heat the milk and vanilla bean (or extract) in a saucepan until it almost simmers. Do not boil.
- Remove from heat, cover, and let it infuse for 10 minutes.
- In a separate bowl, whisk egg yolks and sugar until pale and fluffy.
- Slowly pour the warm milk into the egg yolk mixture, whisking constantly.
- Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until thickened enough to coat the back of a spoon (about 5-7 minutes).
- Remove from heat immediately and strain through a fine-mesh sieve into a bowl. Let it cool completely.
Caramelize the Bananas
- Peel and slice bananas in half lengthwise.
