Ingredients
Spiced Cream Cheese Base
- 70 ml Milk
- 50 gm Cream Cheese full-fat recommended, softened
- 2 whole Cloves
- 1/4 tsp Chili Flakes or to taste
- 1/2 stick Cinnamon Stick
- 1 tbsp Sugar for added sweetness, granulated, optional
- 4.5 strips Orange Rind
- 1 tbsp Corn Flour
Chocolate & Sweetener
- 80 gm Chocolate 70% cacao or higher recommended, dark, finely grated
- 30 gm Sweetened Milk condensed
Garnish
- 1 piece Orange Peel candied, or other desired garnish
- 2 tsp Sugar for caramelizing, granulated
Instructions
Infuse the Spices
- Combine softened cream cheese, milk, cloves, cinnamon stick, orange rind, chili flakes (if using), and optional granulated sugar in a heavy-bottomed saucepan. Let stand for 10 minutes to allow the spices to infuse.
Create the Cream Base
- Stir in the cornstarch. Simmer over low heat for 5 minutes, stirring constantly. Remove from heat and let stand for another 10 minutes. Strain the mixture through a fine-mesh sieve to remove the spices.
Combine Chocolate and Cream
- Melt the dark chocolate in a double boiler or microwave. Gently whisk in the strained cream cheese mixture and condensed milk until smooth and well combined.
Cook and Finish
- Return the mixture to low heat and cook, stirring frequently, until it thickens to a custard-like consistency (about 5 minutes). Stir in the candied orange peel (if using). Pour into individual serving glasses or ramekins.
Chill and Caramelize
- Refrigerate for at least 2-3 hours, or until set. Before serving, sprinkle granulated sugar over the top of each serving. Caramelize the sugar using a kitchen torch or by carefully heating the sugar with a spoon over a flame until melted and slightly browned. Serve chilled or at room temperature.
