  • 2 tsp Sugar for caramelizing, granulated

Infuse the Spices

  • Combine softened cream cheese, milk, cloves, cinnamon stick, orange rind, chili flakes (if using), and optional granulated sugar in a heavy-bottomed saucepan. Let stand for 10 minutes to allow the spices to infuse.

Create the Cream Base

  • Stir in the cornstarch. Simmer over low heat for 5 minutes, stirring constantly. Remove from heat and let stand for another 10 minutes. Strain the mixture through a fine-mesh sieve to remove the spices.

Combine Chocolate and Cream

  • Melt the dark chocolate in a double boiler or microwave. Gently whisk in the strained cream cheese mixture and condensed milk until smooth and well combined.

Cook and Finish

  • Return the mixture to low heat and cook, stirring frequently, until it thickens to a custard-like consistency (about 5 minutes). Stir in the candied orange peel (if using). Pour into individual serving glasses or ramekins.

Chill and Caramelize

  • Refrigerate for at least 2-3 hours, or until set. Before serving, sprinkle granulated sugar over the top of each serving. Caramelize the sugar using a kitchen torch or by carefully heating the sugar with a spoon over a flame until melted and slightly browned. Serve chilled or at room temperature.
