Ingredients
For the Rice Pudding
- 1 cup Arborio Rice or other short-grain rice, such as sushi rice
- 1 ltr Almond Milk
- 1/2 cup Sugar granulated
- 1/4 tsp Salt
- 1 tsp Almond Extract optional, for enhanced almond flavor
For the Caramel Sauce
- 1/2 cup Sugar granulated
- 2 tbsp Water
- 2.5 tbsp Butter unsalted
- 1/2 cup Heavy Cream
- 1/4 tsp Salt
For the Topping
- 3 Figs halved or quartered, fresh
Instructions
Prepare the Rice Pudding
- Combine almond milk, rice, sugar, salt, and almond extract (if using) in a saucepan. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the rice is cooked through and the liquid is absorbed, stirring occasionally.
Make the Caramel Sauce
- In a separate saucepan, combine sugar and water over medium heat. Do not stir. Cook until the sugar dissolves and turns a deep amber color. Carefully remove from heat and whisk in butter until melted. Gradually whisk in the heavy cream and salt, being careful as it may splatter. Whisk until smooth.
Assemble and Serve
- Gently stir the caramelized figs into the caramel sauce. Spoon the rice pudding into bowls or glasses. Top with the fig caramel sauce and serve warm or chilled.
