Instructions

Prepare the Rice Pudding

  • Combine almond milk, rice, sugar, salt, and almond extract (if using) in a saucepan. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the rice is cooked through and the liquid is absorbed, stirring occasionally.

Make the Caramel Sauce

  • In a separate saucepan, combine sugar and water over medium heat. Do not stir. Cook until the sugar dissolves and turns a deep amber color. Carefully remove from heat and whisk in butter until melted. Gradually whisk in the heavy cream and salt, being careful as it may splatter. Whisk until smooth.

Assemble and Serve

  • Gently stir the caramelized figs into the caramel sauce. Spoon the rice pudding into bowls or glasses. Top with the fig caramel sauce and serve warm or chilled.

Recipe Notes

Expert Tips

  • For a richer flavor, toast the rice lightly before cooking.
  • Use high-quality almond milk for the best results.
  • If the caramel becomes too dark, immediately remove from heat to prevent burning.
  • Feel free to experiment with other fruits in the caramel sauce, such as berries or stone fruits.
