Ingredients
 

For the Sheera

  • 2 tbsp Clarified Butter melted desi ghee preferred for authentic flavor
  • 1/2 cup Gram Flour besan
  • 1/2 cup Sugar adjust to your sweetness preference. caster sugar can also be used., granulated
  • 1 1/2 cup Water dessert-like consistency., more water for a thinner consistency; less for a thicker
  • 1/4 - 1/2 tsp Cardamom Powder adjust to taste. freshly ground cardamom is ideal.

Preparing the Chickpea Flour

  • Place a heavy-bottomed pan over medium-low heat. Add ghee and let it melt completely.
  • Add chickpea flour to the melted ghee and reduce heat to low. Stir continuously for 10-12 minutes, or until the flour turns a light golden brown and releases a nutty aroma.

Combining Ingredients

  • Gradually pour in the water while continuously stirring to prevent lumps. The mixture will initially appear grainy.
  • Increase the heat to medium-high and bring the mixture to a boil, stirring constantly.
  • Reduce heat to low, stir in the sugar and cardamom powder. Simmer for about 30 seconds, or until the sheera thickens to a smooth, custard-like consistency.

Serving the Sheera

  • Remove from heat and pour the sheera into serving bowls. Garnish with sliced almonds and serve immediately while warm.

  • For a richer flavor, toast the chickpea flour in a dry pan before adding the ghee.
  • Use freshly ground cardamom powder for the best aroma and flavor.

  • For a richer, creamier texture, you may add a splash of milk or cream towards the end of cooking.
