Ingredients
For the Moong Dal Paste

- 1/2 cup Ghee adjust as needed for desired richness.
- 2 tsp Cardamom Powder or 4-6 green cardamom pods, finely ground.
Instructions
Prepare the Moong Dal
- Wash and soak the yellow moong dal in 1 cup of water for at least 5-6 hours, or overnight.
- Drain the soaked dal and grind it to a smooth paste using a blender or food processor, adding a little water if needed to achieve a smooth consistency.
Make the Sugar Syrup
- In a saucepan, combine 1 cup of sugar and 1 cup of water. Bring to a boil over medium heat, stirring until the sugar dissolves completely.
- Add 2 tablespoons of milk to the boiling syrup. This helps to remove any impurities that may form on the surface. Gently skim off any foam or scum that rises to the top using a spoon or strainer.
- Continue boiling the syrup until it reaches the one-thread consistency (a thin thread forms when you lift a spoonful and let it fall back into the pan).
- Remove from heat and set aside.
Cook the Sheera
- Heat 1/2 cup of ghee in a non-stick pan or kadai over medium heat. Once melted, add the ground moong dal paste.
- Stir continuously, ensuring the dal doesn't stick to the pan. Add more ghee if needed to prevent sticking.
- Cook until the dal turns a light golden brown and starts to leave the sides of the pan, about 10-15 minutes.
- Slowly pour in the prepared sugar syrup and continue stirring gently until it is fully absorbed by the dal. This will take about 5-7 minutes.
- Stir in the cardamom powder (or ground cardamom pods).
Garnish and Serve
- Remove from heat and garnish with sliced almonds, cashews, and raisins.
- Serve the Moong Dal Sheera hot or warm.
