Ingredients
For the Kofta
- 2 cup Banana Flower and finely chopped, cleaned, washed
- 1 Potato boiled and mashed, large
- 100 grams Gram Flour roasted for enhanced flavor
- 2 tbsp Onion paste
- 1 tbsp Ginger and garlic paste
- 1.5 tsp Salt or to taste
- 0.5 tsp Chili Powder red
For the Curry
- 1 cup Tomato finely chopped
- 1 tbsp Cumin Seeds
- 1 tbsp Turmeric Powder haldi
- 1 tbsp Coriander Powder dhania
- 1 tsp Garam Masala
- 2 tbsp Vegetable Oil for frying and for the curry
- a handful Coriander for garnish
Instructions
Prepare the Banana Flower
- Boil the banana flower in water for 5 minutes. Drain well and set aside to cool slightly.
Make the Kofta
- In a large bowl, mash the boiled banana flower. Add the mashed potato, onion paste, ginger-garlic paste, salt, red chili powder, and roasted besan. Mix thoroughly until a cohesive dough forms. Divide the mixture into small portions and roll into balls.
Fry the Kofta
- Heat the vegetable oil in a pan over medium heat. Carefully fry the kofta balls until golden brown on all sides. Remove from the pan and set aside.
Prepare the Curry
- Heat the remaining oil in a separate pan. Add the cumin seeds and sauté for a few seconds until fragrant. Add the ginger-garlic paste and onion paste. Sauté until the onions soften and the oil begins to separate.
Add Spices and Tomatoes
- Stir in the turmeric powder, coriander powder, and red chili powder. Cook for a minute until fragrant. Add the chopped tomatoes and cook until softened, about 5-7 minutes.
Simmer the Curry
- Pour in 1.5 cups of water. Bring to a boil, then add the fried koftas. Reduce heat to low, cover, and simmer for 5-7 minutes, allowing the flavors to meld.
Garnish and Serve
- Turn off the heat. Garnish with fresh coriander leaves. Serve hot with chapati, naan, or steamed rice.
Recipe Notes
Expert Tips for the Best Banana Flower Kofta Curry
- For extra flavor, you can add a pinch of asafoetida (hing) along with the cumin seeds while making the curry.
- If the kofta mixture is too dry, add a tablespoon of water at a time until it reaches the desired consistency.
- To prevent the koftas from breaking during frying, ensure that the oil is hot enough before adding them to the pan.
- Feel free to adjust the amount of red chili powder according to your spice preference. For a milder curry, reduce the amount.
