Ingredients
Chicken
- 800 gm Chicken Pieces cut into medium size pieces, on the bone
Dry Spice Rub
- 1 tbsp Paprika adjust to your spice preference, or kashmiri chili powder
- 1 tbsp Cracked Pepper adjust to your spice preference, black
- 1 tbsp Garlic Powder or 1 tbsp freshly minced garlic
- 1 tbsp Onion Powder optional
- 1 tsp Salt or to taste
Seasoned Crumbs
- 1 1/2 cup All-Purpose Flour
- 1 cup Breadcrumb
- 1 cup Coarsely Corn Flakes crushed
- 1 1/2 tbsp Garlic Powder optional
- 1 1/2 tbsp Onion Powder optional
- 1 tbsp Paprika add more for extra heat, or kashmiri chili powder
- 1 tsp Pepper adjust to your spice preference, black
- 2 tbsp Rosemary dried
- 1 tsp Salt or to taste
Wet Ingredients
- 2 Large Eggs
- 3 tbsp Milk
- 2 tbsp Refined Oil plus extra for drizzling
Instructions
- Wash and pat the chicken pieces dry with paper towels. This helps the spice rub adhere and the crumbs stick better.
- Score each chicken piece with a sharp knife, making deep gashes. This allows the marinade to penetrate the meat for maximum flavor.
- In a bowl, combine the dry spice rub ingredients. Rub this mixture all over the chicken pieces, ensuring they are evenly coated. Marinate for at least 1 hour, or longer for deeper flavor.
- In a large shallow dish, combine all the seasoned crumbs ingredients. Mix well to distribute the seasonings evenly.
- In another shallow dish, whisk together the eggs and milk.
- Preheat the oven to 350°F (175°C).
- Dip each marinated chicken piece into the egg mixture, letting any excess drip off. Then, dredge the chicken in the seasoned crumbs, pressing gently to ensure a good coating.
- Repeat the dipping and crumbing process a second time for an extra-crispy crust. Gently pat the crumbs onto the chicken to help them adhere.
- Arrange the crumb-coated chicken pieces on a greased baking sheet.
- Drizzle a little oil over each chicken piece. This helps with browning and crispness.
- Bake for 5-7 minutes at 400°F (200°C) for an initial blast of heat to set the crust. Then, reduce the oven temperature to 350°F (175°C) and bake for another 15 minutes.
- Remove the baking sheet from the oven and drizzle a little more oil over each chicken piece. This helps keep the chicken moist and prevents it from drying out.
- Return the chicken to the oven and continue baking until the crust is golden brown and the chicken is cooked through, reaching an internal temperature of 165°F (74°C).
- Let the chicken rest for a minute or two before serving. Enjoy with a side of creamy coleslaw.
