Instructions

Prepare the Dough

  • Mix all-purpose flour and salt. Gradually add water, kneading until a smooth, elastic dough forms. For vegetable momos, incorporate spinach paste. For fish momos, add beetroot paste. For chicken momos, add carrot paste.

Prepare the Fillings

  • For each filling (chicken, fish, vegetable), separately sauté the common filling ingredients (ginger, celery, spring onions, sesame oil, oyster sauce, onion, salt, and pepper) until fragrant. Add the respective protein or vegetable mixture and cook until heated through.

Assemble the Momos

  • Divide the dough into small balls. Roll each ball into a thin circle. Place a spoonful of filling in the center, pleat the edges to seal, and shape into a half-moon or other desired form.

Steam the Momos

  • Steam the momos for 20 minutes, or until the fillings are cooked through.

Prepare the Dip Sauce

  • Blanch and chop two tomatoes. Mix with chopped green chilies, sesame seeds, and a teaspoon of oil. Season to taste.

Recipe Notes

Expert Tips for Perfect Momos

  • For extra tender momos, let the dough rest for at least 30 minutes after kneading.
  • Don't overfill the momos; this can cause them to burst during steaming.
  • Experiment with different vegetable combinations for the vegetable momos to create your own signature flavor.
  • Serve your momos immediately with the dipping sauce for the best taste and texture.
