Ingredients
For the Potatoes
- 3 large Potato boiled and peeled
For the Tempering
- 2 tbsp Oil vegetable or coconut oil
- 1 tsp Gram black, split, urad dal
- 1 tsp Mustard Seeds rai
- 1 tsp Fennel Seeds saunf
- 10 Curry Leaves
- 2 Chili broken; adjust to your spice preference, dry, red
Other Ingredients
- 4 clove Garlic minced
- 1 medium Onion finely chopped
- 1 tbsp Chili Powder mirch; adjust to your spice preference
- 1.5 tsp Salt or to taste
- 1 tsp Garam Masala
- 2 tbsp Gram Flour besan
- 1 tbsp Coriander dhania, finely chopped
Instructions
Prepare the Tempering
- Heat oil in a pan over medium heat. Add mustard seeds, urad dal, fennel seeds, and red chilies. Let it sizzle until the dal turns golden brown.
Sauté Aromatics
- Add minced garlic and sauté for about a minute until fragrant. Add the finely chopped onion and sauté until softened and translucent.
Combine with Potatoes
- Add the boiled and roughly mashed potatoes to the pan. Mix well, ensuring the potatoes are coated with the spice mixture. Break up larger potato pieces using a spatula or the back of a spoon.
Season and Cook
- Add salt, chili powder, and garam masala. Mix thoroughly and cook for 5-7 minutes, allowing the flavors to meld.
