Ingredients

- 3 Tbsp Coffee Powder finely ground
- 1 1/2 cup Water
For the Coffee
- 1 1/2 cup Milk full-fat
- 2 tsp Sugar or to taste, per serving
- 1 South Indian Coffee Filter
Instructions
- Place the top vessel (with holes) of the South Indian coffee filter onto the bottom vessel.
- Add the coffee powder to the top vessel and gently press it down with your fingertips. This helps ensure even extraction.
- Bring the water to a rolling boil in a separate pot. Boiling the water ensures proper brewing temperature.
- Carefully pour the boiling water over the coffee grounds in the top vessel. Close the lid.
- Allow the coffee to brew for 15-20 minutes, until the decoction has collected in the bottom vessel. This slow brewing process extracts the full flavor and aroma of the coffee.
- Once brewed, carefully pour the decoction into a separate container.
- In a tumbler (or glass), add ΒΌ cup of the coffee decoction.
- Heat the milk until hot, but not boiling. Add the hot milk and sugar to the tumbler with the decoction. Adjust the amount of decoction to your preference for stronger or milder coffee.
- To create the signature froth, pour the coffee back and forth between the tumbler and a davara (or another similar container) several times. This process also helps dissolve the sugar and creates a smooth, creamy texture.
