Instructions

  • In a pan, heat 1 tablespoon of oil. Add asafoetida and Urad Dal. Sauté for a minute until fragrant.
  • Add ground roasted cumin seeds, red chili powder, and salt. Sprinkle a little water to help the spices bloom. Mix well and set aside to cool.
  • In a large bowl, combine all-purpose flour, salt, baking soda, and ½ cup refined oil. Gradually add water and knead into a smooth, pliable dough. This may take about 5-7 minutes.
  • Cover the dough and let it rest for at least 10 minutes. This allows the gluten to relax, resulting in a flakier kachori.
  • Divide the dough into small, equal-sized balls.
  • Take one dough ball and flatten it slightly in your palm. Create a well in the center and fill it with the prepared Urad Dal mixture.
  • Carefully bring the edges of the dough together to enclose the filling completely, pinching and sealing tightly to prevent leakage during frying.
  • Gently flatten the filled dough ball into a disc, ensuring the filling remains evenly distributed.
  • Heat about 3 cups of refined oil in a deep frying pan or kadai over medium heat. Carefully slide the prepared kachoris into the hot oil, ensuring not to overcrowd the pan.

  • Fry the kachoris, turning occasionally, until they are golden brown and crispy. This will take approximately 6-8 minutes.
  • Remove the kachoris from the oil using a slotted spoon and place them on a wire rack or paper towel-lined plate to drain excess oil.
  • Serve the hot, crispy Khasta Kachoris with your favorite pickle or chutney and enjoy!

Recipe Notes

Good To Know

  • For an extra-crispy kachori shell, allow the dough to rest for at least 30 minutes before rolling; this relaxes the gluten and enhances flakiness when fried.
  • If you prefer baked kachoris, brush them with a little oil or ghee and bake at 180°C (350°F) for 25-30 minutes, flipping halfway through; while not as classic, this yields a lighter but still flaky result.
  • Add a pinch of amchur (dry mango powder) or a few drops of lemon juice to the urad dal filling for a tangy note that balances the spicy and salty flavors beautifully.

Expert Tips

  • Use a good quality moong dal or urad dal for the filling to ensure a flavorful and textured kachori.
  • Don't overcrowd the pan when frying the kachoris; this will lower the oil temperature and result in soggy kachoris. Fry in batches for best results.
  • For a visually appealing kachori, you can use a cookie cutter to create uniform circles before frying.

Storage Instructions

  • Leftover kachoris can be stored in an airtight container for up to two days.
  • To re-crisp, warm them in a preheated oven or air fryer rather than microwaving, which can make them soggy.
