  • 2 cup Rice basmati rice, cooked according to package directions. long grain rice can also be used.

Prepare the Rice

  • Cook basmati rice according to package directions until each grain is separate. You may use leftover rice.

Sauté the Spices and Dal

  • Heat coconut oil in a pan over medium heat. Add mustard seeds and let them splutter. Add split black gram (urad dal), split chickpeas (chana dal), and cashews. Fry for 2-3 minutes until lightly golden brown.

Add Aromatics and Chilies

  • Add green chilies, red chilies, curry leaves, and asafoetida. Sauté for about 30 seconds until fragrant.

Roast the Coconut

  • Add the grated coconut and roast for 2-3 minutes, stirring frequently, until lightly golden and fragrant. Do not over-roast.

Combine and Serve

  • Add the cooked rice and salt. Stir gently to combine everything well. Cook for another minute, stirring occasionally, to heat through. Remove from heat.

Serving Suggestions

  • Serve hot with your favorite side dishes such as pickle, papadum, or any vegetable curry.
