Ingredients
Rice
- 2 cup Rice basmati rice, cooked according to package directions. long grain rice can also be used.
Spices and Aromatics
- 1 tsp Mustard Seeds rai
- 1 tbsp Gram black, split, urad dal
- 1 tbsp Chickpeas chana dal, split
- 1 pinch Asafoetida hing
- 1 leaf Curry Leaves
- 2 Chilies finely chopped, green, optional
- 2 Chilies finely chopped, red
- 6 Cashews
Coconut
- 1 cup Coconut freshly grated
Other
- 1 tbsp Coconut Oil or other vegetable oil
- 1/2 tsp Salt or to taste
Instructions
Prepare the Rice
- Cook basmati rice according to package directions until each grain is separate. You may use leftover rice.
Sauté the Spices and Dal
- Heat coconut oil in a pan over medium heat. Add mustard seeds and let them splutter. Add split black gram (urad dal), split chickpeas (chana dal), and cashews. Fry for 2-3 minutes until lightly golden brown.
Add Aromatics and Chilies
- Add green chilies, red chilies, curry leaves, and asafoetida. Sauté for about 30 seconds until fragrant.
Roast the Coconut
- Add the grated coconut and roast for 2-3 minutes, stirring frequently, until lightly golden and fragrant. Do not over-roast.
Combine and Serve
- Add the cooked rice and salt. Stir gently to combine everything well. Cook for another minute, stirring occasionally, to heat through. Remove from heat.
Serving Suggestions
- Serve hot with your favorite side dishes such as pickle, papadum, or any vegetable curry.
