Ingredients
- 1/4 cup Milk
- 1/2 cup Water
- 1.5 tsp Salt of, or as per taste
- 1/2 cup Rice Flour
- 1/2 Ghee tspn
- 1 cup Coconut Milk thick
- 1 cup Coconut Milk thin
- 2 tbsp Jaggery
- 2 Sesame Seed Oil tspn
Instructions
Prepare the Rice Dumpling Dough
- Heat the milk and water in a saucepan over medium heat. Add salt. Stir continuously until the mixture is lukewarm.
- Gradually add the rice flour, stirring constantly to prevent lumps from forming. Continue stirring until the mixture begins to thicken.
- Stir in ghee and continue cooking, stirring continuously, until a soft dough forms. Remove from heat.
- Transfer the dough to a bowl. Stir in sesame oil and knead into a soft, pliable dough. Cover to prevent drying.
Shape and Roast the Dumplings
- Lightly grease your hands with ghee or oil. Roll the dough into small, marble-sized balls.
- Heat a lightly oiled flat pan or griddle over low heat. Roast the dumplings for approximately 1 minute per side, until lightly browned. Set aside.
Simmer the Dumplings in Coconut Milk
- In a heavy-bottomed pan, bring the thin coconut milk to a boil over medium heat. Gently add half of the roasted dumplings to the boiling coconut milk.
- Simmer for 2-3 minutes, or until the dumplings float to the surface. Add the remaining dumplings and stir gently.
- Once the dumplings are cooked through, stir in the grated jaggery and cook for another minute until the jaggery dissolves and the sauce thickens slightly. Stir in the thick coconut milk and heat through.
Serve
- Remove from heat. The Pal Kozhukattai is ready to serve warm. Enjoy!
