Ingredients
Rice & Coconut Milk
- 2 cup Basmati Rice
- 3 cup Coconut Milk (freshly extracted from half a coconut is recommended)
Aromatics & Spices
- 2 Onions thinly sliced
- 3 Chillies green, slit lengthwise
- 3 Bay Leaves
- 10 Garlic Cloves
- 1/2 tsp Cumin Seeds
- 1 tsp Cinnamon coarsely crushed
- 1 Cardamom Pod green
Instructions
- First, rinse the basmati rice under cold water until the water runs clear. This removes excess starch and helps achieve fluffy, separated grains. Set the rinsed rice aside.
- In a large, heavy-bottomed pan or pot, heat the butter (or ghee/oil combination) over medium heat. Add the cumin seeds and let them sizzle for a few seconds to release their aroma.
- Add the bay leaves and cashews to the pan. Sauté until the cashews turn lightly golden brown and fragrant.
- Add the sliced onions, garlic cloves, and slit green chilies to the pan. Sauté for 2-3 minutes, until the onions soften and become translucent.
- Stir in the crushed cinnamon and green cardamom pod. Sauté for another minute to blend the spices with the other aromatics.
- Add the rinsed basmati rice to the pan and gently stir to coat it with the spiced oil. This helps toast the rice slightly and enhances its flavor.
- Pour in the coconut milk and add salt. Stir well to combine.
- Bring the mixture to a gentle simmer, then reduce the heat to low, cover the pan tightly, and let it cook undisturbed for 15 minutes. This allows the rice to absorb the coconut milk and cook evenly.
- After 15 minutes, carefully remove the lid and gently fluff the rice with a fork. Check if the rice is cooked through and the liquid has been fully absorbed. If needed, cook for a couple more minutes. Avoid over-stirring, as this can make the rice mushy.
