Ingredients
For the Chicken Curry
- 500 gm Chicken bone-in, thighs and drumsticks recommended
- 2 Onion finely chopped, large
- 2 tbsp Ginger-Garlic Paste
- 2 Tomato finely chopped, medium
- 1.5 tsp Salt or to taste
- 1/2 tsp Turmeric haldi
- 1/2 tsp Chili Powder red
- 1/2 tsp Cumin jeera
- 1/2 tsp Coriander dhania
- 1 tsp Garam Masala
- 1 Bay Leaf tej patta
- 1 stick Cinnamon
- 3 Cardamom elaichi, lightly crushed
- 4 Cloves
- 1/2 tsp Fennel Seeds
- 2 Chili finely chopped, green
- 1 tbsp Vinegar
- 1/2 tsp Sugar optional
- 3 tbsp Vegetable Oil
- 1/2 cup Water or as needed
- 2 Potato cut into 1-inch cubes, medium
- 1/4 cup Coriander chopped, dhania, for garnish
For the Bunny Chow
- 1 Bread crustless bread or a large round loaf works best
Instructions
Prepare the Bread
- Cut the bread loaf in half horizontally. Carefully scoop out the inside of the bread, leaving a 1-inch border, creating a bread bowl. Set aside.
Prepare the Chicken Curry
- Wash and clean the chicken. Chop the onions, tomatoes, and green chilies. Cube the potatoes.
Sauté Aromatics
- Heat oil in a large pan or pot over medium heat. Add the bay leaf, cinnamon stick, cardamom pods, and cloves. Sauté until fragrant (about 30 seconds).
Build the Curry
- Add the chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and cook for another minute.
Add Spices
- Add the turmeric powder, red chili powder, cumin seed, coriander powder, garam masala, fennel seeds, vinegar, and sugar (if using). Sauté until fragrant and the oil begins to separate (about 2 minutes).
Cook the Chicken and Potatoes
- Add the chicken pieces and potatoes to the pan. Cook, stirring frequently, until the chicken is browned and coated with spices.
Simmer the Curry
- Add about 1/2 cup of water (or more as needed) to the pan. Bring to a simmer, reduce heat, cover, and cook until the chicken is tender and the potatoes are cooked through (about 20-25 minutes). Stir occasionally.
Assemble the Bunny Chow
- Garnish with fresh coriander. Spoon the chicken curry generously into the prepared bread bowls. Serve immediately with your favorite sides, such as a salad or chutney.
