Ingredients
For the Dough
- 1 cup All-Purpose Flour maida
- 3 tbsp Sugar
- 1 tbsp Active Yeast dry
- 1/4 cup Milk
- 4 tbsp Water lukewarm
- 2 tbsp Butter
For the Filling
- 1 cup Desiccated Coconut
- 1 tsp Sugar
- 1 tsp Cardamom Powder elaichi
- 2 tbsp Cherries sliced
- 2 tbsp Almonds chopped
- 1 tbsp Fruit Jam mixed
- 1 tsp Butter melted
For Decoration
- 2 tbsp Chocolate Chips for eyes and nose
- 10 Chocolate Pieces for ears
- 5 Gems for mouth
Instructions
- In a bowl, combine the yeast, lukewarm water, and 1 teaspoon of sugar. The warm water activates the yeast.
- Let the yeast mixture stand for 10 minutes until foamy. This indicates the yeast is active and ready to use.
- In a large bowl, whisk together the all-purpose flour and the remaining 2 tablespoons of sugar.
- Add the milk and 2 tablespoons of butter to the dry ingredients.
- Pour the activated yeast mixture into the bowl with the flour mixture.
- Knead the dough for 15 minutes until smooth and elastic. Kneading develops the gluten, which gives the buns their structure.
- Place the dough in a lightly oiled bowl, cover with cling wrap, and let rise in a warm place for 1 hour, or until doubled in size.
- While the dough is rising, prepare the filling. In a bowl, combine the desiccated coconut, sugar, cardamom powder, sliced cherries, chopped almonds, mixed fruit jam, and melted butter. Mix well.
- Punch down the risen dough to release the air. Divide the dough into 5 equal pieces.
- Roll each piece of dough into an oval shape and spread the coconut filling evenly over the surface.
- Seal the edges of the dough to enclose the filling completely, forming a bun shape.
- Decorate the buns to resemble bunnies. Use chocolate pieces for ears, chocolate chips for eyes and noses, and gems for mouths.
- Place the bunny buns on a baking sheet lined with parchment paper.
- Cover the buns loosely and let them rise for another 30 minutes in a warm place.
- Preheat oven to 180°C (350°F).
- Brush the buns generously with milk. This will give them a golden brown crust.
- Bake for 10 minutes, then sprinkle a little desiccated coconut on the "forehead" of each bunny.
- Continue baking for another 20 minutes, or until the buns are golden brown and cooked through.
- Once baked, brush the warm buns with melted butter for added flavor and shine.
- Let the buns cool slightly before serving. Enjoy these adorable and delicious Coconut Bunny Buns!
Recipe Notes
Good To Know
- For an extra flavor boost, add a pinch of cardamom powder or a few chopped nuts (like cashews or almonds) to the coconut filling before stuffing the buns.
- If you want the bunny features (ears, nose, tail) to hold their shape better, chill the shaped buns in the fridge for 15 minutes before the final proofing and baking.
- For a vegan version, substitute milk with coconut milk and use plant-based butter or oil; this will also enhance the coconut flavor profile.
- To give your bunny buns a beautiful glossy finish, brush them with a mixture of milk and a little sugar just before baking, and again right after they come out of the oven.
Expert Tips
- Use a kitchen scale to ensure each bun is the same size, promoting even baking.
- Don't overfill the buns with coconut filling, as this can cause them to burst during baking.
- For a festive touch, add a small piece of candied fruit or a sprinkle of colored sugar to the bunny's "nose" before baking.
Storage Instructions
- Store leftover bunny buns in an airtight container at room temperature for up to 3 days or in the freezer for up to 2 months. Thaw overnight in the refrigerator before serving.
