Ingredients
 

For the Chayote Squash

  • 1 medium Chayote Squash also known as chow chow; peeled, and cubed, seeded
  • 1/2 tsp Turmeric haldi
  • 1 tsp Salt or to taste

For the Spice Paste

  • 1 medium Onion roughly chopped
  • 5 Chili adjust to your spice preference, dried, red
  • 1 tbsp Chickpea split chickpeas
  • 1 tbsp Lentil black, split black lentils
  • 1/2 tsp Cumin
  • 1 tbsp Coriander

For the Tempering

Other Ingredients

  • 1/2 cup Water
  • 1/4 cup Coriander dhania, finely chopped, for garnish
  • 2 medium Tomato chopped

Instructions
 

Prepare the Chayote Squash

  • Wash, peel, and seed the chayote squash. Cube the flesh into bite-sized pieces. In a saucepan, combine the cubed chayote with 1/2 tsp turmeric powder and salt. Add enough water to cover and cook until tender, about 10-15 minutes. Drain the cooked chayote thoroughly and set aside.

Make the Spice Paste

  • In a blender, combine the roughly chopped onion, dried red chilies, chana dal, urad dal, cumin seeds, and coriander seeds. Add a little water and blend into a smooth paste.

Temper the Curry

  • Heat the oil in a pan or kadai over medium heat. Add mustard seeds and let them splutter. Add the broken red chilies and curry leaves, followed by the finely chopped onion. Sauté until the onions soften and turn translucent.

Simmer the Curry

  • Add the cooked chayote squash and the prepared spice paste to the pan. Stir well to combine. Pour in 1/2 cup of water and chopped tomatoes. Bring to a simmer, and cook for 5-7 minutes, or until the sauce slightly thickens. Stir occasionally to prevent sticking.

Finish and Serve

  • Stir in the fresh coriander leaves. Remove from heat and serve hot with steamed rice. Enjoy your delicious Chow Chow Poricha Kuzhambu!
