Instructions

Prepare the Koeksisters

  • Sift together the all-purpose flour, sorghum flour, baking powder, and salt.
  • Add the vegetable oil and water, mixing to form a stiff dough. Knead thoroughly.
  • Refrigerate the dough, covered, for at least 15 minutes.

Make the Sugar Syrup

  • Combine sugar and water in a saucepan over medium-high heat. Add the cinnamon stick, nutmeg, and vanilla extract.
  • Stir until the syrup thickens to a stringy consistency. Remove from heat and set aside.

Shape and Fry the Koeksisters

  • Roll out the dough to about 1-inch thickness. Cut into 3 thin strips, leaving the top end uncut.
  • Pinch the top ends together firmly and braid the strips. Fry in hot oil until golden brown.
  • Immerse the fried koeksisters in the sugar syrup for about 2 minutes.
  • Garnish with honey and serve.

Prepare the Semolina Pudding

  • Bring water and almond milk to a boil in a saucepan.
  • Add the roasted semolina and vermicelli, along with the grated carrot. Cook until softened.
  • Stir in the sugar, cardamom powder, and clarified butter. Cook until thickened.

Garnish and Serve

  • Garnish with ghee-roasted raisins, sliced almonds, and additional grated carrots (optional).
  • Refrigerate for at least 15 minutes before serving chilled.

Recipe Notes

Expert Tips

  • For extra crispy Koeksisters, let the fried pastries cool slightly before dipping in the syrup.
  • Roasting the semolina and vermicelli before adding them to the pudding enhances their flavor and texture.
  • Adjust the sweetness of both desserts to your preference by adding more or less sugar.
  • Feel free to experiment with other spices and garnishes to personalize these recipes to your liking.
