Ingredients
For the Koeksisters
- 1 cup All-Purpose Flour also known as maida
- 1 tbsp Sorghum Flour also known as jowar flour
- 1 tsp Baking Powder
- 2 tsp Vegetable Oil
- 1 tsp Salt or to taste
- 1/2 cup Water approximately; add more as needed to form a stiff dough
- 1 cup Sugar for the syrup
- 1 cup Water for the syrup
- 1 stick Cinnamon Stick
- 1/4 tsp Nutmeg ground
- 2 tsp Vanilla Extract
- 2 cup Vegetable Oil for frying
- 2 tbsp Honey for garnish
For the Semolina Pudding
- 1 cup Semolina also known as suji, roasted
- 2 tbsp Vermicelli roasted
- 2 tbsp Carrot grated
- 1 tsp Cardamom Powder also known as elaichi
- 1 cup Almond Milk
- 1 cup Sugar
- 3/4 cup Ghee also known as ghee
- 2 cup Water
Instructions
Prepare the Koeksisters
- Sift together the all-purpose flour, sorghum flour, baking powder, and salt.
- Add the vegetable oil and water, mixing to form a stiff dough. Knead thoroughly.
- Refrigerate the dough, covered, for at least 15 minutes.
Make the Sugar Syrup
- Combine sugar and water in a saucepan over medium-high heat. Add the cinnamon stick, nutmeg, and vanilla extract.
- Stir until the syrup thickens to a stringy consistency. Remove from heat and set aside.
Shape and Fry the Koeksisters
- Roll out the dough to about 1-inch thickness. Cut into 3 thin strips, leaving the top end uncut.
- Pinch the top ends together firmly and braid the strips. Fry in hot oil until golden brown.
- Immerse the fried koeksisters in the sugar syrup for about 2 minutes.
- Garnish with honey and serve.
Prepare the Semolina Pudding
- Bring water and almond milk to a boil in a saucepan.
- Add the roasted semolina and vermicelli, along with the grated carrot. Cook until softened.
- Stir in the sugar, cardamom powder, and clarified butter. Cook until thickened.
Garnish and Serve
- Garnish with ghee-roasted raisins, sliced almonds, and additional grated carrots (optional).
- Refrigerate for at least 15 minutes before serving chilled.
