Ingredients
 

For the Pesarattu Batter

  • 1 cup Mung Bean (split and hulled), green
  • 1 inch Ginger finely chopped
  • 2 Chili finely chopped, green
  • 1/2 tsp Asafoetida (hing)
  • 1 tsp Salt or to taste
  • 2 tbsp Rice Flour
  • 2 tbsp Water or as needed for desired batter consistency

  • 2 tbsp Oil for cooking

Prepare the Batter

  • Soak the green moong dal in plenty of water for at least 4-6 hours, or preferably overnight. Drain the soaked dal completely.
  • Grind the drained dal into a smooth batter using a blender. Add the ginger, green chilies, asafoetida, and salt. Blend until a smooth paste forms.
  • Transfer the batter to a bowl. Stir in the rice flour and enough water to achieve a dosa-like consistency. The batter should be slightly thick, but pourable.

Cook the Pesarattu

  • Heat a lightly oiled flat griddle or tawa over medium heat.
  • Pour a ladleful of the batter onto the hot griddle, spreading it gently into a thin, circular crepe.
  • Sprinkle your desired toppings (carrot, coconut, onion) over the crepe.
  • Drizzle a little oil around the edges of the crepe.
  • Cook for 2-3 minutes per side, or until golden brown and crispy.
  • Serve hot with your favorite chutney.
