Ingredients
For the Dahi Vada (Fritters)
- 1 cup Pigeon Peas also known as moong dal. rinse thoroughly., moong dal, split, yellow
- 1 tsp Ginger Paste
- 3 Chilies finely chopped, green
- 1/2 cup Coriander also known as dhania, finely chopped
- 1/2 cup Water for adjusting batter consistency
- 1.5 tsp Salt adjust to taste
- 2 cup Vegetable Oil for deep frying
For the Yogurt Topping
- 2 cup Yogurt thick, plain yogurt or curd
- 1 tbsp Salt kala namak, black
- 1/2 tsp Chili Powder adjust to taste, red
- 1 tbsp Cumin Seeds dry roasted and ground
For Serving
- 2 tbsp Tamarind Chutney sweet
- 2 tbsp Coriander Chutney green
Instructions
Prepare the Moong Dal Batter
- Wash and soak the moong dal for at least 3-4 hours, or overnight. Drain well and grind into a smooth, fine paste using a blender or food processor. Add water as needed to achieve a slightly thick batter.
- In a large bowl, combine the ground moong dal batter with ginger paste, green chilies, coriander leaves, and salt. Mix thoroughly until well combined.
Fry the Dahi Vada
- Heat the oil in a deep, heavy-bottomed pan or kadai over medium-high heat. Once the oil is hot (a drop of batter should sizzle immediately), carefully drop spoonfuls of the batter into the hot oil, maintaining a safe distance between each vada.
- Fry the vadas until they turn a deep golden brown and are crispy on the outside. Remove from oil and place on a plate lined with paper towels to drain excess oil.
Soak and Prepare the Vadas
- Immediately after frying, transfer the hot vadas into a bowl of lukewarm water for about 10 minutes. This helps soften the vadas and remove excess oil.
- Gently remove the vadas from the water and press them gently to remove any excess water.
Assemble and Serve
- In a serving bowl, whisk together the yogurt, black salt, red chili powder, and roasted cumin powder. Arrange the softened vadas in the spiced yogurt.
- Garnish generously with sweet tamarind chutney and green coriander chutney. Serve immediately and enjoy!
