Ingredients
 

For the Batter

  • 1 cup Mung Bean (split pigeon peas), green
  • 2 tbsp Rice brown
  • 1 cup Spinach chopped, packed
  • 1/2 cup Mint leaves
  • 1/2 cup Coriander (cilantro)
  • 1.5 tsp Salt or to taste
  • 2 Chili chopped, green, or to taste
  • 1 inch Ginger finely chopped
  • as needed Water

For Serving

  • Oil for cooking (optional, if using a non-stick pan)
  • Chutney such as coconut chutney or ginger chutney, your favorite chutney

Instructions
 

Prepare the Batter

  • Wash and soak the green moong dal and brown rice together overnight. Drain the water completely.
  • Combine the soaked dal, rice, spinach, mint, coriander, green chilies, ginger, and salt in a blender.
  • Grind into a smooth batter, adding water as needed to reach a dosa-like consistency.

Cook the Pesarattu

  • Heat a non-stick or lightly oiled tawa (griddle) over medium heat.
  • Pour 1/4 cup of batter onto the hot tawa, spreading it thinly into a circle.
  • Cook for 2-3 minutes per side, or until golden brown and cooked through. If using a non-stick pan, oil may not be necessary.
  • Remove from the tawa and serve immediately.
  • Repeat the process with the remaining batter.

Serve

  • Serve the Hariyali Pesarattu hot with your favorite chutney.
