Ingredients
 

Pasta

  • 8 oz Pasta whole wheat or semolina pasta. use your favorite shape!

Vegetables

  • 1 cup Beans trimmed and chopped, green
  • 1/2 cup Dill fresh dill, finely chopped
  • 2 medium Tomatoes finely chopped
  • 1 medium Onion sliced
  • 2 clove Garlic minced
  • 1 Chili finely chopped (optional, adjust to taste), green
  • 1 tsp Ginger fresh ginger, finely minced

Seasoning & Oil

  • 1 tbsp Olive Oil
  • 1/4 tsp Cinnamon ground cinnamon
  • 1/2 tsp Herbs italian seasoning, dried, or a similar blend, oregano
  • 1/2 tsp Salt to taste
  • 1/4 tsp Pepper freshly ground, black, to taste

Instructions
 

Prepare the Pasta

  • Cook pasta according to package directions, adding salt to the boiling water.

Sauté Aromatics

  • Heat olive oil in a large pan or wok over medium heat. Add minced garlic, ginger, and green chili (if using) and sauté for 1 minute until fragrant.

Cook Vegetables

  • Add sliced onions and sauté for 2-3 minutes until softened. Stir in chopped tomatoes and green beans. Cover and cook for 5 minutes, or until the beans are tender-crisp and the tomatoes are slightly softened.

Create the Sauce

  • Stir in the chopped dill, cinnamon, salt, and pepper. Cook for 2-3 more minutes, allowing the flavors to meld.

Combine and Serve

  • Drain the cooked pasta and add it to the pan with the vegetable sauce. Toss gently to combine. Serve immediately, garnished with extra dill, if desired.
