- 1/4 tsp Mustard Seeds rai
- 1/4 tsp Urad Dal black, split
- 1 tsp Chickpea split, split bengal gram
- 1/2 tsp Turmeric Powder haldi
- 1 1/2 tsp Salt or to taste
Instructions
Prepare the Potatoes
- Pressure cook the potatoes for 3 whistles until they are soft enough to mash easily. Once the pressure releases, drain any excess water.
- Peel and mash the potatoes until completely smooth and lump-free.
Tempering the Spices
- Heat oil in a pan or kadhai over medium heat. Add mustard seeds, split black gram, and chana dal. Allow them to splutter.
- Add curry leaves and green chilies; sauté until the chilies lighten in color.
Building the Saagu
- Add chopped onions and sauté until softened.
- Stir in chopped tomatoes and cook until they become mushy.
- Add the mashed potatoes, turmeric powder, and salt. Mix well.
- Pour in 1 1/2 cups of water and bring to a boil.
- Simmer for about 5-7 minutes, stirring occasionally, until the gravy thickens to your desired consistency.
Garnish and Serve
- Remove from heat and garnish with fresh coriander leaves.
- Serve hot with idli, dosa, poori, or rava idli.
