  • 3 tbsp Oil vegetable oil or coconut oil
  • 1 1/2 cup Water

Prepare the Potatoes

  • Pressure cook the potatoes for 3 whistles until they are soft enough to mash easily. Once the pressure releases, drain any excess water.
  • Peel and mash the potatoes until completely smooth and lump-free.

Tempering the Spices

  • Heat oil in a pan or kadhai over medium heat. Add mustard seeds, split black gram, and chana dal. Allow them to splutter.
  • Add curry leaves and green chilies; sauté until the chilies lighten in color.

Building the Saagu

  • Add chopped onions and sauté until softened.
  • Stir in chopped tomatoes and cook until they become mushy.
  • Add the mashed potatoes, turmeric powder, and salt. Mix well.
  • Pour in 1 1/2 cups of water and bring to a boil.
  • Simmer for about 5-7 minutes, stirring occasionally, until the gravy thickens to your desired consistency.

Garnish and Serve

  • Remove from heat and garnish with fresh coriander leaves.
  • Serve hot with idli, dosa, poori, or rava idli.
