Ingredients
Pasta
- 2 cups Pasta your preferred shape, such as tagliatelle or pappardelle
Aromatic Vegetables
- 1 Large Onion finely chopped
- 4 stalks Celery finely chopped
- 1 Carrot finely chopped
- 6 Mushrooms sliced
- 1/2 cup Bell Peppers finely chopped, green
- 1/2 cup Bell Peppers finely chopped, red
Meat (Optional)
- 1 lb Beef ground, or a mix of beef and pork
Sauce Base
- 3 Tomatoes and roughly chopped, blanched, peeled, ripe
- 2 tbsp Tomato Paste
- 4 tbsp Olive Oil
Seasoning and Herbs
Finishing
- 1/2 cup Parmesan Cheese grated
Instructions
Prepare the Tomatoes
- Blanch the tomatoes in boiling water for 30 seconds, then transfer to an ice bath. Peel, remove seeds, and roughly chop.
Cook the Pasta
- Cook pasta according to package directions in salted boiling water with a tablespoon of olive oil. Reserve 1/4 cup of pasta water before draining.
Sauté the Vegetables
- Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat. Add the onion, celery, and carrot and cook until softened, about 5-7 minutes.
Brown the Meat (Optional)
- If using meat, add it to the pot and cook, breaking it up with a spoon, until browned. Drain any excess fat.
Add Remaining Vegetables and Seasoning
- Add the garlic, mushrooms, and bell peppers to the pot and cook for another 5 minutes.
Build the Sauce
- Stir in the tomato paste, chopped tomatoes, tomato sauce, basil, parsley, pepper flakes, sugar, and salt. Bring to a simmer, reduce heat to low, and cook for at least 30 minutes, or up to an hour for a richer flavor, stirring occasionally. Taste and adjust seasoning as needed.
Combine Pasta and Sauce
- Add the cooked pasta to the sauce and toss to combine. Add a little pasta water if needed to loosen the sauce.
Finish and Serve
- Stir in the Parmesan cheese, cover, and let it sit for 2 minutes to allow the flavors to meld. Serve immediately.
