  • For Spaghetti ANGLIO. E OLIO : In a heavy bottomed pan bring water to boil and add salt.
  • Add spaghetti and cook for 12 mins.
  • Drain and transfer to a bowl.
  • For Anglio E OLIO : in a pan combine oil and garlic and stir well
  • Once garlic turns to golden brown add crushed basil leaves , oregano , pepper powder and salt and stir well.
  • Now add in boiled spaghetti and combine well.
  • For Italian Tomato Sauce : in a pan add oil and garlic.Add red chilli flakes , crushed basil , sugar to taste , salt and stir well.
  • Now add hot and sweet chilli sauce and chopped tomatoes and cook till they are soft.
  • Now transfer this to a blender and make a smooth paste and keep aside.
  • For plating : pour in Italian Tomato Sauce evenly on a plate.
  • Place in twirled Spaghetti (with the use of fork) in the centre.
  • Garnish with Dehydrated tomatoes and basil leaves.

Recipe Notes

Do not rely on the package to give you the correct cooking time (this is only a guideline). Start timing when the water returns to a boil. Most pastas cook in 8 to 12 minutes. Test dry pasta for doneness after about 4 minutes of cooking by tasting it.
