Ingredients
Tomato Sauce
- 4 tsp Butter
- 12 clove Garlic
- 1 tsp Chilli Flakes
- 4 Tomatoes chopped, medium sized
- 1 tsp Sugar
- 1.5 tsp Salt or as per taste
- 1 tsp Chilli Sauce or sweet hot and sweet
Instructions
- For Spaghetti ANGLIO. E OLIO : In a heavy bottomed pan bring water to boil and add salt.
- Add spaghetti and cook for 12 mins.
- Drain and transfer to a bowl.
- For Anglio E OLIO : in a pan combine oil and garlic and stir well
- Once garlic turns to golden brown add crushed basil leaves , oregano , pepper powder and salt and stir well.
- Now add in boiled spaghetti and combine well.
- For Italian Tomato Sauce : in a pan add oil and garlic.Add red chilli flakes , crushed basil , sugar to taste , salt and stir well.
- Now add hot and sweet chilli sauce and chopped tomatoes and cook till they are soft.
- Now transfer this to a blender and make a smooth paste and keep aside.
- For plating : pour in Italian Tomato Sauce evenly on a plate.
- Place in twirled Spaghetti (with the use of fork) in the centre.
- Garnish with Dehydrated tomatoes and basil leaves.
Recipe Notes
Do not rely on the package to give you the correct cooking time (this is only a guideline). Start timing when the water returns to a boil. Most pastas cook in 8 to 12 minutes. Test dry pasta for doneness after about 4 minutes of cooking by tasting it.
Additional Tips
- For a deeper flavor in your tomato sauce, slow-simmer it for at least 30 minutes, adding a splash of pasta cooking water towards the end to help emulsify the sauce and coat the spaghetti beautifully.
- If you enjoy a spicy kick, sauté a few dried red chili flakes with the garlic in your oil; this step infuses the oil and gives the entire dish a subtle, authentic heat.
