Prepare the Ingredients

  • Peel and finely slice the onions. Finely chop the green chilies, coriander, and mint leaves. Blanch the almonds and halve them.

Marinate the Chicken

  • In a mixing bowl, combine the ginger-garlic paste, yogurt, lemon juice, chili powder, garam masala, chopped green chilies, half of the coriander and mint leaves, turmeric powder, and salt. Add the chicken and mix well to coat. Marinate for at least 30 minutes (longer is better).

Cook the Rice

  • Soak the saffron strands in 2 tablespoons of warm water. Set aside.
  • In a heavy-bottomed pot, bring 5 cups of water to a boil. Add the bay leaves, cardamom pods, cinnamon stick, star anise, and caraway seeds. Add the washed basmati rice and cook until it's about 90% done (still slightly firm to the bite). Drain the rice and set aside.

Sauté Aromatics and Cook Chicken

  • Heat the desi ghee and oil in a large, heavy-bottomed pot. Add the sliced onions and sauté for 15 minutes until golden brown. Remove and set aside. Add the blanched almonds and cook until lightly golden. Remove and set aside.
  • Add the marinated chicken to the pot and cook over low heat until almost cooked through. Add about 1 cup of water, cover, and cook until the chicken is tender.

Layer and Cook the Biryani

  • Spread half of the cooked rice evenly over the chicken. Sprinkle with the remaining coriander and mint leaves, followed by the fried onions and almonds. Cover tightly and cook on low heat for 10 minutes.
  • Stir the saffron water into the remaining rice, ensuring the rice is evenly colored. Gently spread this saffron rice over the layered biryani. Cover tightly and cook for another 5 minutes on low heat.

Serve

  • Remove from heat and let stand for 5-10 minutes before serving. Garnish with the remaining fried onions and almonds. Serve hot.
