Ingredients
Marinade
- 1 lb Chicken boneless
- 1/2 cup Corn Flour
- 2 tbsp Ginger-Garlic Paste
- 1 tbsp Chili Powder
- 1/2 tsp Pepper ground, black
- 1/4 tsp Food Coloring optional, red
- 1 1/2 tsp Salt or to taste
- 2 tbsp Coriander fresh, chopped
- 1 tbsp Curry Leaves fresh, chopped
- 2 cup Vegetable Oil for frying
Tempering
- 3 Chilies green, slit
- 1 tbsp Curry Leaves fresh, chopped
- 2 tbsp Vegetable Oil for tempering
Instructions
Marinate the Chicken
- Marinate the chicken with all the marinade ingredients for at least 1 hour, or preferably longer for deeper flavor.
Fry the Chicken
- Heat the vegetable oil in a deep pan or wok over medium-high heat. Once hot, carefully add the marinated chicken pieces, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 5-7 minutes, turning occasionally. Remove and set aside on a wire rack to drain excess oil.
Prepare the Tempering
- In a separate pan, heat the tempering oil over medium heat. Add the slit green chilies and curry leaves. Sauté briefly until fragrant, about 30 seconds.
Combine and Serve
- Add the fried chicken to the pan with the tempering. Gently stir to combine. Cook for another minute to allow the flavors to meld. Serve hot as an appetizer or snack.
Recipe Notes
Expert Tips for the Best Chicken 65
- For extra crispy chicken, double fry it: Fry once until almost cooked through, then remove and let cool slightly. Fry again until golden and super crispy.
- Adjust the chili powder according to your spice preference. For a milder version, reduce the amount; for extra heat, add more.
- Don't overcrowd the pan when frying the chicken. This will lower the oil temperature and result in soggy chicken instead of crispy.
- Marinate the chicken overnight in the refrigerator for the most flavorful results. The longer it marinates, the more intense the flavors will be.
