Ingredients

- 1.5 tsp Salt or to taste
Instructions
Roast the Vegetables
- Wash the eggplant and tomatoes thoroughly. Lightly oil the eggplant and roast it directly over a gas flame or under a broiler, turning frequently, until the skin is charred and the flesh is soft (about 5-7 minutes). Roast the tomatoes similarly until softened.
Prepare the Eggplant
- Once cool enough to handle, peel off the charred skin from the eggplant. Discard the skin.
Sauté Aromatics
- Heat the mustard oil in a pan. Add the minced garlic and sauté until lightly browned. Add the chopped onion and sauté for about a minute until lightly browned. Stir in the green chili and sauté for 30 seconds.
Mash and Combine
- Add the mashed potatoes, peeled and mashed eggplant, and roasted tomatoes to the pan. Add salt to taste. Mix everything well to combine. Heat through, but do not overcook.
