Ingredients
Dal & Vegetables
- 1 cup Pigeon Pea split pigeon peas
- 1 Mango grated, raw
- 1 Tomato chopped
- 1 Chili Pepper green
- 2 cups Water or as needed for desired consistency
Spices & Aromatics
- 1 tsp Turmeric haldi
- 1 tsp Chili Powder red
- 1 tsp Cumin seeds
- 1 tsp Mustard Seed rai
- 2 Chili Pepper dried, red, whole
- 3 cloves Garlic chopped
- 1 pinch Asafoetida hing
Instructions
Prepare the Dal
- Wash the arhar dal thoroughly and set aside.
Pressure Cook the Dal
- In a pressure cooker, combine the dal, grated raw mango, chopped tomato, green chili, salt, and turmeric powder. Add 2 cups of water (or more as needed for desired consistency). Pressure cook until the dal is tender.
Adjust Consistency and Simmer
- Once the pressure is released, check the consistency of the dal. If it's too thick, add more water to reach your desired consistency. Return the cooker to the stovetop and simmer for a few minutes.
Tempering the Spices
- Heat the olive oil (or vegetable oil) in a small frying pan. Add the cumin seeds, mustard seeds, asafoetida, and whole dried red chilies. Allow the seeds to splutter. Add the chopped garlic and fry until lightly browned. Stir in the red chili powder and remove from heat.
Combine and Garnish
- Pour the spice tempering over the cooked dal. Stir gently to combine. Garnish with chopped coriander leaves and serve hot with steamed rice.
Recipe Notes
Expert Tips for the Best Raw Mango Dal:
- Choose the Right Mango: Select a raw, firm mango for the best tangy flavor. Avoid mangoes that are overripe or soft.
- Adjust Spice Levels: Feel free to adjust the amount of red chili powder to your preferred level of spiciness. Start with less and add more to taste.
- Enhance the Flavor: For a richer flavor, you can sauté the grated mango with a little oil before adding it to the pressure cooker.
- Garnish Generously: A generous garnish of fresh coriander leaves adds a vibrant pop of color and freshness to the dal.
