Ingredients
For the Tamarind Paste
For the Tempering (Thalimpu)
- 2 tsp Oil
- 1/2 tsp Mustard Seed rai
- 1 tsp Gram black, split, urad dal
- 2 Chili Pepper adjust to your spice preference, dry, red
- 1 pinch Asafoetida hing
- 1/4 cup Water for grinding
Instructions
Prepare the Tamarind
- Wash the raw tamarind thoroughly and boil it in a bowl of water for 5 minutes over medium heat.
- Remove from heat and set aside to cool.
Saute Aromatics
- Heat 1 tbsp oil in a pan. Add the garlic pods and sauté for 2 minutes until fragrant.
- Add the green chilies and sauté for another minute.
- Stir in the cumin seeds and chopped coriander leaves. Sauté for 30 seconds.
- Add the boiled tamarind pieces and sauté for 5 minutes, stirring occasionally.
- Remove from heat and let cool completely.
Grind into a Paste
- Transfer the cooled mixture to a blender. Add salt and 1/4 cup of water.
- Blend until you achieve a smooth, fine paste. Adjust water as needed to reach desired consistency.
Prepare the Tempering
- Heat 2 tsp oil in a small pan. Add mustard seeds and let them splutter.
- Add the urad dal, red chilies, and asafoetida. Sauté until the dal turns golden brown and fragrant.
Combine and Serve
- Pour the tempering into the tamarind paste and gently mix well.
- Serve the Chintakaya Pachadi with hot steamed rice, idli, dosa, or curd rice.
