Ingredients
For the Dal
- 1/2 cup Pigeon Pea split pigeon peas
- 2 cup Water for pressure cooking the dal
For the Tempering
- 1 tbsp Vegetable Oil or ghee (clarified butter)
- 1/2 tsp Mustard Seeds rai
- 1/2 tsp Cumin Seeds optional
- 1/4 tsp Asafoetida hing
- 10 Curry Leaves
- 2 Chilies broken into pieces, dried, red
- 2 Chilies green, slit lengthwise
- 4-6 clove Garlic finely minced
For the Curry
- 1 Mango medium-sized, peeled and chopped, raw
- 4 Drumsticks cut into 1-inch pieces
- 1/8 tsp Turmeric haldi
- 1/2 tsp Chili Powder adjust to taste, optional, red
- Salt Salt to taste
- 1 cup Water as needed for desired consistency, or more
- 1 tbsp Clarified Butter for serving (optional)
Instructions
Prepare the Dal
- Pressure cook the toor dal with 2 cups of water until soft. Set aside.
Sauté Aromatics
- Heat oil or ghee in a kadai (wok) over medium heat. Add mustard seeds and cumin seeds (if using). Once they splutter, add asafoetida, curry leaves, dried red chilies, and green chilies. Sauté for a few seconds.
Add Garlic and Mango
- Add minced garlic and sauté briefly until fragrant. Add the chopped raw mango and drumsticks. Sauté for a few minutes until the mango softens slightly.
Simmer the Curry
- Pour in 1 cup of water and add salt. Cover the kadai and simmer until the mango is very soft and mushy. Use a masher to roughly mash the mango pieces.
Combine and Finish
- Mash the cooked toor dal with a whisk or fork. Add the mashed dal to the mango mixture. Stir well. Add more water if needed to reach your desired consistency. Stir in turmeric powder and red chili powder (if using).
Serve
- Simmer for a few more minutes. The dal will thicken as it cools. Adjust consistency as needed. Serve hot with rice, topped with a teaspoon of ghee.
