Ingredients
For Topping
- 1/4 cup Oats museli
- 2 tbsp Whole Wheat Flour whole
- 1/2 tsp Cinnamon ground
- 2 tsp Honey or date, or syrup date syrup
- 1 tsp Butter melted, unsalted
- Filling for the
- 1 cup Apple diced
- 1/2 tsp Cinnamon ground
- 1/4 tsp Corn Flour
For The Crust
- 1/2 cup Whole Wheat Flour whole
- tsp Baking Powder
- 1.5 tsp Salt or as per taste
- 2 tsp Butter melted, unsalted
- 2 tbsp Soy Milk room temperature unsweetened
- 1/2 tsp Vanilla Extract
- 2 tbsp Cane Sugar
Instructions
- Preheat the oven to 180°C, and grease an 8x4â¬Â loaf pan.
- To prepare the topping, stir together the oats, flour, and cinnamon. Make a well in the center. Pour in the honey/date syrup and butter, and stir until all ingredients are completely incorporated.
- To prepare the filling, gently toss together the apples, cinnamon, and cornstarch until the apples are evenly coated.
- To prepare the crust, whisk together the flour, baking power, and salt in a small bowl. In a separate bowl, whisk together the butter, milk, and vanilla. Stir in the coconut sugar. Add in the flour mixture, stirring just until incorporated.
- Press the crust into the bottom of the prepared pan. (If it sticks to your spatula or fingers, then moisten your fingers with a tiny bit of water, and continue as needed.)
- Spread the filling evenly across the crust. Sprinkle the oat mixture on top of the apples. (It tends to clump, so break it into tiny pieces as you go!)
- Bake at 180°C for 30-35 minutes or until the topping feels firm and the crust appears to be done. Cool completely to room temperature in the pan, and let the bars rest for at least 2 hours before slicing and serving.
- If you prefer a thicker layer of streusel, then double the topping.After 35 minutes, the apples will still be a little firm. For softer apples, carefully cover the pan with foil, and continue to bake for an additional 10-15 minutes.

- For an extra layer of flavor, sprinkle a handful of chopped toasted walnuts or pecans over the apple filling before adding the crumble topping.
- If you prefer a less sweet bar, substitute half of the honey with unsweetened applesauce—it will add moisture and highlight the natural apple flavor.
- Let the bars cool completely before slicing; chilling them in the refrigerator for at least an hour will make for cleaner, easier cuts.
- To make these bars dairy-free, replace the butter with coconut oil or a vegan butter substitute—this will also add a subtle, complementary flavor to the apples and cinnamon.
