Instructions

  • Whisk together the whole wheat flour, cinnamon, salt, baking powder, and baking soda in a bowl. Sift the dry ingredients three times to aerate the flour, resulting in a lighter cake.
  • Peel, core, and chop the apple into small chunks. Toss with a little lemon juice to prevent browning.
  • In a separate bowl, combine the oats and sugar for the crumble topping. Add the melted and cooled butter and mix until the oats are evenly coated.
  • In a large bowl, cream together the softened butter and brown sugar until light and fluffy. This incorporates air into the batter, creating a tender crumb.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can develop the gluten in the flour and make the cake tough.
  • Stir in the vanilla extract and lukewarm milk until the batter is smooth.
  • Preheat the oven to 325°F (160°C). Line a muffin tin with cupcake liners.
  • Fill the cupcake liners about halfway with the cake batter.
  • Distribute the chopped apples evenly over the batter in each liner.
  • Sprinkle the oat crumble topping generously over the apples.
  • Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
