- 1 cup Strawberries fresh, hulled and sliced
For the Kheer
- 4 cup Milk
- 1/4 cup Basmati Rice rinsed
- 1 cup Strawberry Puree from above
- 1/2 cup Sugar adjust to your sweetness preference, or to taste
- 1 tsp Cardamom Powder ground; also known as elaichi
- 1/4 cup Almonds sliced and toasted
- 1/4 cup Cashews sliced and toasted
- 1/4 cup Pistachios sliced and toasted
- 1/4 cup Coconut shredded, unsweetened
Instructions
Prepare the Strawberry Puree
- Blend the fresh strawberries until smooth. Strain if desired for a smoother puree.
Cook the Kheer
- Rinse the basmati rice thoroughly. In a heavy-bottomed pan, combine the milk, rinsed rice, and cardamom powder.
- Bring to a boil over medium heat, then reduce heat to low. Stir frequently to prevent sticking and burning.
- Simmer for 20-25 minutes, or until the rice is cooked through and the milk has thickened to a creamy consistency.
