Ingredients
- 200 gm Whole Wheat Flour whole
- 50 gm Flour amarnath
- 1 tsp Yeast
- 2 tbsp Honey
- 1 tsp Salt or as per taste
- 2.5 tsp Oil
- 1 cup Water
- Bell Peppers corn, olive, onion, tomato and vegetables of your choice
- 1/2 cup Cheese grated
- 3 tbsp Pizza Sauce
- Chilli Flakes or oregano, or seasoning oregano and for seasoning
Instructions
- Prepare the ferment by mixing 1 tsp yeast with 2 tbsp honey and 1/4 cup water and leave for proofing for 15 mins.
- In one bowl sieve the wheat flour, Amarnath Flour .Add proofed yeast and remaining warm water . Make a sticky dough .
- Add Oil and salt and incorporate into dough .
- Knead the dough using palm to form gluten or till soft and velvety.
- Apply Oil all over the bowl and Rest the dough for 1 hr or till it doubles in volume.
- Once the dough is almost doubled in size, (after 1 to 2 hours), gently deflate using your knuckles, knead gently for few seconds.
- make a round shape with dough and prick it with the fork and leave for 30 mins covered with moist cloth.
- Spread pizza sauce over the first pizza base and sprinkle cheese ,onion ,tomato, chilli flakes and oregano.
- take another pizza base over the first one and spread pizza sauce and sprinkle capsicum, olive, corn, cheese, chilli flakes and oregano.
- place a plain pizza base at top and cut the pizza and give a twist.
- Bake at 200 degree for 20 mins in preheated oven.

- If you prefer a gluten-free option, substitute the wheat flour with a gluten-free blend, but increase the binding agent (such as psyllium husk or ground flaxseed) to help hold the dough together since amaranth flour is naturally gluten-free but less elastic.
- For added flavor and color, knead finely chopped fresh herbs (like basil, oregano, or parsley) or a pinch of chili flakes directly into the dough before layering and twisting.
- If making ahead, par-bake the twisted pizza (about 70% done), let it cool, and then freeze. When ready to serve, bake straight from the freezer at 190°C (375°F) for 10-15 minutes until heated through and golden.
