Ingredients
Sprouted Moth Beans
- 100 gm Moth Beans raw
Seasoning
- 1 tsp Salt or to taste
- 1/2 tsp Turmeric Powder
Fresh Vegetables & Herbs
Dressing & Garnishes
- 1 tbsp Lemon Juice
- 1 tsp Chaat Masala
- 1 tsp Mango Pickle Masala for the tangy twist, optional
- 1 tbsp Chickpea Noodle fine
Instructions
- Soak the moth beans in water for 2-3 hours to soften them.
- Drain the soaked moth beans and place them in a muslin cloth. Cover and let them sprout for about 1 day.
- Pressure cook the sprouted moth beans with salt, turmeric powder, and a small amount of water. Cook until the first whistle blows. This ensures the beans are tender but not mushy.
- Transfer the cooked moth beans to a bowl. Add the chopped tomato, cucumber, boiled potato, green chili, and cilantro.
- Toss the ingredients together gently to combine.
- Now for the tangy twist! Add the mango pickle masala and mix well. This adds a unique depth of flavor to the salad.
- Drizzle lemon juice and sprinkle chaat masala over the salad. Toss gently to coat.
- Garnish with sev and additional chopped cilantro for a final touch of flavor and texture.
