Ingredients
 

Salad Vegetables

  • 1 Lettuce iceberg, hand-plucked into bite-sized pieces
  • 1 cup florets Broccoli blanched in salted water
  • 1/2 cup Corn baby, blanched in salted water, cut into diamond shapes
  • 1/2 cup Zucchini blanched in salted water, cut into rounds
  • 8 Olives black, sliced
  • 8 Tomatoes cherry, halved

Dressing Ingredients

  • 250 gm Yogurt lightly beaten
  • 30 gm Pickle mixed, pureed
  • 5 gm Cumin seeds, roasted and ground
  • 4 cloves Garlic finely minced
  • 10 gm Mint finely chopped, fresh
  • 1-2 tsp Pepper black, or to taste
  • 1/2 tsp Salt or to taste

Prepare the Indian-Style Caesar Dressing

  • Combine yogurt, pureed mixed pickle, roasted and ground cumin seeds, minced garlic, chopped mint, salt, and pepper in a bowl. Whisk until smooth and creamy.

Blanch the Vegetables (if using fresh)

  • Blanch broccoli, baby corn, and zucchini in salted boiling water until tender-crisp. Immediately plunge into ice water to stop the cooking process. Drain well and set aside.

Make the Croutons

  • Preheat oven to 375°F (190°C). Cube the bread into 1/2-inch pieces. Toss with olive oil and season lightly with salt and pepper. Spread on a baking sheet and bake for 8-10 minutes, or until golden brown and crispy.

Assemble the Salad

  • In a large bowl, combine the hand-plucked lettuce, blanched vegetables (if using), and the prepared Caesar dressing. Toss gently to coat.

Arrange and Garnish

  • Transfer the salad to a serving bowl. Arrange the remaining vegetables, cherry tomatoes, and black olives artfully on top. Sprinkle generously with shaved Parmesan cheese and garnish with chopped parsley.
