Sponge gourd contains high amount of dietary fibre, vitamin c, zinc, iron and magnesium. It is very tender vegetables and easy to cook. I made a simple curry with adding onion garlic and some other ingredients.

Ingredients
 

  • 250 gm Sponge Gourd
  • 1 to Tomato chopped
  • 1 Onion chopped
  • 2 tbsp Poppy Seeds
  • 2 tbsp Mustard Seeds
  • 1 tbsp Mustard Oil
  • 1 bunch Coriander
  • 2 Green Chillies chopped
  • 1 tsp Ginger chopped
  • 1 tsp Garlic chopped
  • 1-2 tsp Salt or as per taste

Instructions
 

  • Wash and chop sponge gourd. Boil the turai and keep separate. Make a paste with green chillies, poppy seeds, mustard seeds and coriander leaves.

  • Heat a pan add 1 tsp mustard oil, chopped onion and garlic. Stir fry then add chopped tomato and green chillies Add boiled turai, couscous and mustard paste and salt.

  • Cook for 5-7 minutes with covering the lid. It can be served with steamed rice or chapati.
