Paneer e khaasis a medley of sandesh and pomegranate kernels. It is an awesome combo , where it tastes as great as the visual appearance of this dessert is. The looks of this dessert are so attractive that one does not want to cut it and have it. And when you taste , it is more than your expectations. We have used a simple sandesh recipe whereas you can use your own variations in flavour and choice of fruits.

Ingredients
  

  • 1 litre milk
  • 1 lemon juice
  • 4 teaspoon powdered sugar
  • few drops of kewda essence
  • nuts to garnish
  • 1 pomegranate kernels

Instructions
 

  • Prepare Chenna by Heating the milk in a vessel. When it starts boiling add lemon juice. Stir continuously using a wooden spoon till it curdles completely. Remove it from the flame.
  • Drain the curdled milk through a fine muslin cloth and wring (hang) it to squeeze out excess water from the resultant paneer.
  • Remove the paneer onto the kitchen platform and mash it with palm for 10 minutes and rub in the sugar according to taste. Add the kewda essence.
  • Knead well to bind and get rid of any lumps. Your sandesh is ready to give the desired shapes.
  • Take a mould and put in a layer of the chenna mix. Top it with a layer of pomegranate kernels.
  • Again put a layer of sandesh and then another layer of pomegranate kernels over it.
  • Garnish with nuts in centre , unmould and store refrigerated.
  • Serve chilled.

Notes

It is optional to cook chenna after mashing for 3 to 4 minutes in a non stick pan ..not much otherwise it will become crumbly.
