Ingredients
  

  • 200 gm Pumpkin chopped to small cubes from
  • 4 teaspoon Chia seeds
  • 8 Almonds Soaked and peeled
  • 2 tbsp Onions Finely chopped
  • 1 pinch Nutmeg Freshly ground
  • 1 teaspoon Black pepper Freshly ground
  • 3 cup Vegetable stock
  • Salt to taste
  • 200 ml Coconut milk Thick
  • 2 teaspoon Olive oil

Instructions
 

  • Soak Chia seeds in 150 ml of water, keep aside.
  • In a heavy bottomed pan heat olive oil and fry the onions for few seconds.
  • Then add the nutmeg powder , almonds and pumpkin pieces, give few stirs.

  • Pour a cup of water with required salt and black pepper powder.
  • Simmer the stove and close the pan with a lid.
  • After few minutes the veggies become soft and switch off the stove.

  • Put them in a blender and make a soft paste out of it.
  • Add the vegetable stock to the paste and mix well and again heat the stuff in a pan.
  • Once they begin to boil well and the soaked Chia seeds to the pan and mix well.

  • When the soup begins to thicken switch off the stove.
  • Add the coconut milk.
  • Serve hot garnishing with coriander leaves or mint leaves.
