Ingredients Â
- Yellow pumpkin chopped to small cubes from 200 gms
- Chia seeds 4 tea spoons
- Soaked and peeled Almonds 8
- Finely chopped onions 2 table spoons
- Freshly ground nutmeg a pinch
- Freshly ground black pepper 1 tea spoon
- Vegetable stock 3 cups
- Salt to taste
- Thick coconut milk 200 ml
- Olive oil 2 tea spoons

InstructionsÂ
- Soak Chia seeds in 150 ml of water, keep aside.
- In a heavy bottomed pan heat olive oil and fry the onions for few seconds.
- Then add the nutmeg powder , almonds and pumpkin pieces, give few stirs.
- Pour a cup of water with required salt and black pepper powder.
- Simmer the stove and close the pan with a lid.
- After few minutes the veggies become soft and switch off the stove.
- Put them in a blender and make a soft paste out of it.
- Add the vegetable stock to the paste and mix well and again heat the stuff in a pan.
- Once they begin to boil well and the soaked Chia seeds to the pan and mix well.
- When the soup begins to thicken switch off the stove.
- Add the coconut milk.
- Serve hot garnishing with coriander leaves or mint leaves.
