Boiled chickpeas are one of the most versatile ingredients. Add a small jar of mango and pepper salsa to go with it, and you are good to go.

Instructions
- Chop the onion and chili into small pieces. Transfer to a mixing bowl.
- Add the boiled chickpeas, spice mix, cilantro and salt to the mixing bowl.
- Mash everything together into a dough like mixture.
- Divide it into 10 portions. Shape each portion into a disc.
- Place a baking sheet on a baking tray. Lay the croquettes on it and bake for 20 mins at 200 C.
For the Salsa
- Mix the chopped mango, peppers, oregano, chili flakes, herbs and salt in a bowl. Chill it in the fridge for 15 mins.
- Serve the warm croquettes with the chilled salsa.
