Fruit and Nut Honey Paniyarams is a complete essential nutrients packed recipe containing whole wheat flour , jowar flour, finger millet flour, pearl millet flour along with banana, apple, almonds, cashew nuts & jaggery and honey as the sweetener.

Ingredients
  

  • ¾ cup whole wheat flour
  • 1/8 cup jowar flour
  • 1/8 cup pearl millet flour
  • 1/8 cup finger millet flour
  • 1 tablespoon rice flour
  • A pinch of salt
  • ¼ cup organic jaggery powder
  • ¼ cup organic honey
  • 1 Medium size banana
  • ¼ cup finely chopped apple
  • ¼ tsp cardamom powder
  • ¼ tsp dry ginger powder
  • 10 almonds and 10 cashew nuts
  • ½ cup + ½ cup water
  • Gingelly oil as required

Instructions
 

  • Sieve all the flours with salt, cardamom powder and dry ginger powder and set aside in a bowl.
  • Dissolve jaggery powder with ½ cup of water and strain it.
  • In a small blender, blend banana with jaggery water
  • Add the banana jaggery mixture and honey to the flour mixture.
  • Mix well and add ½ cup of water.
  • Mix the batter until there are no lumps. Add some more water if necessary.
  • Chop the nuts and stir them to the batter.
  • Finally add the chopped apples and mix. The batter is ready.

  • Heat a Paniyaram pan and add gingelly oil until ¼th level in all the cavities.
  • Once the oil is heated, pour a small ladle full of the batter in each cavity.
  • Close the lid and allow the paniyaram to cook for 3 mins.
  • Remove the lid and flip the paniyaram and cook again for 3 – 4 minutes or until they are completely cooked.

  • Serve warm and enjoy a complete healthy snack.

Notes

Adjust the sweetener according to your taste.
When cooking paniyarams, cook in medium flame.
Gingelly oil tastes better but it can be replaced with sunflower or groundnut oil or ghee if preferred.
The consistency of the batter should be similar to idli batter consistency. Hence add water accordingly.
I like the crunchiness of the apple in the paniyaram and hence added it finally to the batter. It can also be blended with banana and jaggery if preferred.
