Red rice flour fruit and nut cake is a very healthy snack option for both kids and adults. It has all healthy items like red rice flour,dry fruit and nut and jaggery. And moreover it's all eggless.

  • Red rice flour - 1 cup
  • Baking powder - 3/4tsp
  • Baking soda - 1/2tsp
  • thick curd - 1/2 cup
  • Oil - 6tbspn
  • jaggery syrup - 1/2 cup
  • tuttifrutti badam, cashew,dry grapes - 1 cup
  • Vannila essence - 1 tsp
  • cinnamon powder - 1/4 tsp
  • nutmeg powder - 1/4 tsp
  • milk - little
  • salt - a pinch


  • Sift dry ingredients red rice flour ,baking soda,salt and baking powder for 5 times. Pre heat oven at 180 for 10 mins.Mix curd,oil,cinnamon powder,nutmeg powder and jaggery really well until the mixture is smooth.Then add essence and mix well.
  • Now slowly fold in the dry ingredients to wet and mix gently. Grease and dust a cake pan. Meanwhile mix all dry fruits n nuts with red rice flour and add it to the batter and mix once quickly.
  • Pour this batter in the cake pan tap it twice and bake for 35 min or until a tooth pick inserted comes out clean.
