Bun Maska is a very delicious yet a very easy recipe to make . They are primarily sold by Irani Cafe's in Mumbai . Irani Cafe's are Irani-styled cafes in South Asia . They were initially opened by Zoroastrian Irani immigrants to modern India and Pakistan in the 19th century . Today Hyderabad boasts the largest number of Irani cafes popular for Irani Chai . Bun Maska is a treat to the tastebuds and a heavenly indulgence for many including me. This is my most regular breakfast idea with homemade white butter. It's a total bliss.

Ingredients
  

  • 3 cup all purpose flour
  • 3 tbsp milk powder
  • 1/8 th tsp salt
  • 2 tbsp yeast
  • 1 tsp Sugar
  • 1 1/2 - 2 cup warm milk
  • 1/4 th cup oil
  • For the filling ; homemade white butter 1 cup
  • 1/4 th cup milk for milk wash
  • 2 tbsp sesame seeds

Instructions
 

  • Add the flour , milk powder , salt and oil to a large bowl . Stir in a tsp of sugar in warm milk and put in the yeast . Let it rest in a warm or hot place for a few minutes or till the yeast has started to bubble up and becomes frothy .
  • Also it has a relaxing smell which shows that it is ready for use . Using the milk , knead the dough . If it so happens that more liquid is needed , either use milk or water.
  • Let it rest in a warm place for a few hours or till the dough has risen to double it's quantity .

  • Once the dough is done , punch it down . And start to pull out sections and roll them into small and equal balls . For this shape , roll out the ball of dough into a rectangle ,fold it and roll it into a cylinder .

  • You can make buns of any shape . Give them all a milk wash and sprinkle sesame seeds.Let these rise for about an hour in a warm place . Bake them at 180° C for about 25-30 mins or till they have developed a golden brown colour .

  • Let them cool completely . Cut up the buns through the centre . Cut up the buns through the centre . Fill them up with either the softened butter or whipped cream or fresh cream .
