Marie biscuits are the most common and loved snacks that people have at tea time. These biscuits are in our family for generations.
So it was a challenge for me to try and make these. After many trials i have come up with this one, they are a big hit with my kids and hubby.
My friends tasted these and loved them a lot. The feedback that i got are that they are crunchier, healthier and tastier than the real ones. They are eggless and very easy to prepare.

Ingredients
  

  • 1/2 cup milk
  • 1/4 cup butter
  • 1/4 teaspoon Salt omit if using salted butter
  • 1/2 teaspoon baking soda
  • 1/4 cup Sugar for very light sweet
  • 1/2 cup ragi flour
  • 1/2 cup sattu flour
  • 3/4 cup water chestnut flour or singada
  • 1/8 cup Amaranth flour
  • 1/8 cup jowari sorghum flour

Instructions
 

  • Mix milk sugar and soda and heat till sugar melts. Let this mixture cool. No need to heat if the sugar is in powder form. I am using less sugar but you can add 2-3 tablespoons for sweet biscuits.

  • I have Mixed all 5 flours to make 2 cups in total. You can use wheat and oats flour to taste like Patanjali biscuits, just take same quantity of flour

  • Mix butter in flour evenly before adding the liquid.

  • Add the cooled liquid and make a dough.

  • Use teaspoons of milk to bring everything together. The dough was a little difficult to handle so I used very little milk and also little ghee while rolling it.

  • Divide in portions and roll it very thin using some dry wheat flour. Using a round cutter or a sharp round cup to cut the cookies. Poke holes using toothpick or a fork.

  • Place in a baking tray 2 cm away from each other.

  • Bake on 180C for 15-20 min. When the cookies starts to leave the pan easily it means that the cookies are ready. Cool them on wire rack. Store in airtight containers for 20-30 days.

Notes

Do not handle the dough too much as it will become very tough after baking. Just mix with fingers and not with palms. This method will give crunchy biscuits.
Mine is a 52 litre otg so it takes this much time. It may bake faster in a small oven. So keep an eye on it.
Also keep temperature 160C for smaller oven.
In my 15 ltr otg, i used to bake cookies at 160C for 12-15 minutes
