Vendakkai Poriyal is a South Indian Cuisine. It is ladies finger fry recipe. It is super easy and quick prepared with few basic ingredients which are easily available in our kitchen. Any south indian meal is incomplete without a Poriyal which is a side dish. Basically a south Indian meal consist of atleast 2-3 varieties of Poriyal and this vendakkai Poriyal is one of them.

Ingredients
  

  • Ladies Finger - 250 gms
  • Oil - 2 tbsp
  • Green chilly - 2 chopped
  • Curd - 2 tbsp
  • Red chilly powder - 1 tsp
  • Mustard seeds - 1 tsp
  • Salt

Instructions
 

  • Wash the whole ladies finger (do not cut the edges now). Rub and pat them dry in clean kitchen towel.
  • Now cut off the edges and cut them into thin rings. Set aside.
  • Heat oil in a pan. Add the mustard seeds and let it crackle. Add the ladies finger, chopped chillies and saute them for 3-5 mins.
  • Add the curd and mix well. Increase the heat and fry stirring continuously for around 5 mins.
  • It will start to dry up the moisture, at this point add salt and chilli powder and mix well.
  • Fry for another 5 mins stirring continuously and take off the heat.
