Vendakkai Pachadi

Pachadi is a curry based side dish/ accompaniment. Vendakkai pachadi is more of a ladies finger raita that has a blend of coconut and tempering as well with fried bhindi and spices. It has a crunch from the dal, soothing and splendid flavor from the tadka and savory taste from the curd. It is mostly served with rice, idli and even dosa.

Ingredients
- Lady's finger- 20 - 25 chopped into rounds
- Green chilli- 1 chopped
- Coconut- ½ cup
- Oil- 2 tbsp
- For tempering:
- Urad dal- 1 tsp
- Mustard seeds- 1 tsp
- Dry red chilli- 1 broken
- Turmeric powder- 1-2 pinches
- Curry leaves- 5-6
- Asafoetida- ¼ tsp
- Salt
- Oil- 1 tsp

Instructions
- Grind the coconut into smooth paste by adding little water and keep aside.
- Heat oil in a pan and add the lady's finger, green chilli, salt to taste and fry on medium heat till it is crispy and golden. Approximately around 10-15 mins. Let it cool down completely.
- Add the curd and coconut paste in a mixing bowl and mix well till smooth.
- Add the fried lady's finger to it and mix well.
- To make tempering, heat oil in a pan, add urad dal, mustard seeds, red chilli, curry leaves and let it crackle. Add turmeric and hing saute for few secs and take off the heat.
- Pour the tempering over the mixture, mix well and serve.
