Ingredients

- 200 gm Rice Pasta red
- 1 tbsp Paprika
- 2 tsp Garlic Powder
- Salt to taste
- 1 tsp Pepper black

- 75 gm Cauliflower
- 75 gm Bell Peppers
- 4 clove Garlic large
- 1 Chili dried, red
- 1 bunch Dill fresh, small

- 1.5 tbsp Olive Oil
- 1/3 cup Parmesan Cheese grated
Instructions
- Prep the vegetables: Dice the bell pepper, chop the cauliflower into florets, mince the garlic, and finely chop the fresh dill. Cut the dried red chili into small pieces.
- Cook the pasta: Bring a large pot of salted water to a boil. Add a teaspoon of olive oil to prevent sticking. Add the red rice pasta and cook according to package directions until al dente.
- Drain the pasta: Once cooked, drain the pasta in a colander and rinse under cold water to stop the cooking process.
- Infuse the pasta: In a large bowl, toss the drained pasta with the paprika and 1 teaspoon of olive oil. This helps to coat the pasta evenly and infuse it with the paprika's flavor.
- Sauté the aromatics: Heat the remaining olive oil in a large pot or pan over medium heat. Add the minced garlic and dried red chili. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
- Roast the vegetables: Add the diced bell pepper and cauliflower florets to the pot. Season with salt and pepper. Cook, stirring occasionally, until the vegetables are tender-crisp, about 5-7 minutes.
- Combine and finish: Add the paprika-infused pasta to the pot with the vegetables. Toss everything together to combine.
- Add garlic powder: Sprinkle the garlic powder over the pasta and vegetables. Cook for another minute to allow the flavors to meld.
- Add fresh dill: Remove the pot from the heat and immediately stir in the chopped fresh dill. This preserves its bright flavor and color.
