Ingredients

- 1 Bell Peppers red
- 1 Bell Peppers yellow
- 1 medium Onion thinly sliced
- 2 clove Garlic crushed

Cook the Pasta
- Cook pasta according to package directions in salted boiling water. Reserve about 1/2 cup of pasta cooking water before draining.
Roast the Peppers
- Preheat oven to 400°F (200°C). Toss bell peppers with 1 tablespoon of olive oil, salt, and pepper. Roast for 20-25 minutes, or until the skins are blistered and charred. Place in a bowl, cover with plastic wrap, and let steam for 5 minutes. Peel, remove seeds, and slice into thin strips.
