Pasta & Herbs

  • 8 ounces Pasta any short pasta shape like penne, or farfalle, rotini
  • 1/4 cup Parsley finely chopped, fresh
  • 2 tbsp Scallions chopped, white and green parts

Seasoning & Oil

  • 1.5 tsp Salt or to taste
  • 1/2 tsp Pepper black, freshly ground
  • 1 tsp Oregano dried, or other italian seasoning
  • 2 tbsp Olive Oil

Instructions
 

Cook the Pasta

  • Cook pasta according to package directions in salted boiling water. Reserve about 1/2 cup of pasta cooking water before draining.

Roast the Peppers

  • Preheat oven to 400°F (200°C). Toss bell peppers with 1 tablespoon of olive oil, salt, and pepper. Roast for 20-25 minutes, or until the skins are blistered and charred. Place in a bowl, cover with plastic wrap, and let steam for 5 minutes. Peel, remove seeds, and slice into thin strips.

Sauté Onions and Garlic

  • Heat remaining olive oil in a large skillet over medium heat. Add sliced onions and cook until softened and translucent, about 5-7 minutes. Add crushed garlic and cook for 1 minute more, until fragrant.

Combine and Simmer

  • Add the roasted peppers to the skillet with the onions and garlic. Stir in the drained pasta, reserved pasta water, salt, pepper, oregano, parsley, and scallions. Cook for 3-4 minutes, or until heated through and the sauce has slightly thickened.

Serve

  • Serve immediately, garnished with grated Parmesan cheese, if desired.
